Little recipe for power bars.


I present to you delicious and energizing No-Bake Vegan Power Balls (or Bars, your choice!) These require minimal effort and no oven, making them perfect for a quick and healthy snack.

Ingredients:

  • 1 cup rolled oats

  • 1/2 cup pitted dates (medjool dates work great)

  • 1/2 cup chopped nuts (almonds, walnuts, peanuts, or a mix)

  • 1/4 cup unsweetened shredded coconut

  • 1/4 cup nut butter (peanut butter, almond butter, or cashew butter)

  • 2 tablespoons vegan chocolate chips (dark chocolate is a nice touch)

  • 1 tablespoon chia seeds (optional)

  • 1 teaspoon vanilla extract

  • Pinch of salt

Instructions:

  1. Prep work: If your dates are not very soft, soak them in warm water for 5 minutes to soften them up. Roughly chop the nuts.

  2. Combine dry ingredients: In a large bowl, mix together the rolled oats, chopped nuts, shredded coconut, chia seeds (if using), and a pinch of salt.

  3. Bind with wet ingredients: In a separate bowl, mash the softened dates with a fork or in a food processor until they form a paste. Add the nut butter and vanilla extract to the date paste and mix well.

  4. Bring it all together: Pour the wet ingredients into the dry ingredient bowl and mix everything together thoroughly. You want a sticky and well-combined mixture that holds its shape when pressed.
